Eskimo Cookies
From my childhood, I've had a favorite no-bake refrigerator cookie. It was the first recipe my own children learned to make. But sugar and butter were the top two ingredients. Now, I'm presenting it in a nutritarian version.
1 c. almond butter
1 c. dates
1 tsp vanilla
1/2 c. almond milk
2-3 Tb. cocoa powder
2 c. old fashioned oats
unsweetened coconut flakes
Process first five ingredients in food processor until smooth. Add oats. Pulse to mix. Form balls. Roll in coconut. Refrigerate. Makes about 2 dozen.

Banana Bread in a Bowl
Mmmm! A completely healthy breakfast that tastes like a dessert!
Banana Bread Oatmeal
1 c. old fashioned oats
2 c. water
1 banana, mashed
1/4 c. pecans, chopped
1/2 tsp. allspice
1/4 tsp. nutmeg
1 Tb. golden flax, ground (optional)
1 Tb. ground hemp seed (optional)
1/2 tsp. vanilla or maple flavor
1/4 c. pure maple syrup
Simmer oats in water until water is mostly absorbed. Stir in remaining ingredients. Add non-dairy milk if desired.

Banana Pancakes
Not an ordinary breakfast, this hearty recipe would make a satisfying brunch for a special weekend or holiday.
Holiday Pancakes
3/4 c. old fashioned oats
2 ripe bananas
1 Tb. ground flax seed in 2 Tb. water
2 tsp. coconut oil, melted
1 tsp. vanilla
1/2 tsp. cinnamon
Fresh fruit
a handful of soaked nuts
In a food processor, grind the oats into a flour. Add the bananas and flax and process until smooth. Add oil, vanilla and cinnamon and pulse just until blended. Cook on a 350 degree griddle until bubbly on top. Turn and cook another 3-4 minutes. Top with fruit and nuts. Makes 4 pancakes.

Bean Burgers
In a food processor, blend until smooth: one 14-0z. can of chili beans, drained, 1 egg, and 1/2 cup old-fashioned oats (more or less to get a consistency that can be formed into patties) until smooth. Add 1/2 tsp. onion powder and 1/4 tsp. garlic powder and pulse until uniformly mixed. Spoon into a heated, oiled skillet and flatten with the back of a spoon into patties. Fry each side on medium heat until browned and set. Serve with lettuce, tomato and jalapeno. Makes 2 -4 patties, depending on size.
Variations: use black beans and a dash of soy sauce, nama shoyu, or Braggs Liquid Aminoes in place of the chili beans (pictured). Add red pepper flakes if you like heat. Replace the egg with 1 Tb. ground flaxseed and 3 Tb. water if you prefer.
