For the Waldorf:
5 Tb. orange juice
1/4 tsp. nutmeg
4 slices purple onion
8 brussels sprouts, thinly sliced
2 apples, chopped
2 stalks celery, diced
¼ c. chopped pecans
2 c. cooked brown rice
Saute onion in orange juice and nutmeg until softened. Add Brussels sprouts and cook just until bright green. Remove from heat. Toss with apple, celery and pecans. Spoon onto rice. Top with Lemony Dressing.
Lemony Dressing
8 oz. soft tofu
Juice of 1 lemon
Zest of 1 lemon
1/3 c. maple syrup
Combine in blender and process until smooth.

Yummy! I am excited about this series! We have been doing SO good- eating 100% plant based at home. But, the salads tend to get BORING! So I can't wait for some fresh ideas!
ReplyDeleteI have had a hard time fully committing to eat this way (old bad habits I default to), and some of the food I have read on other sites or in vegan cookbooks either expensive with ingredients you can only find in health food stores, etc -- but your recipes are so different and sound great and I could easily make with what I have. They also appeal to the foodie in me and inspire me all over again to fully commit to this way of eating. THANKS!
ReplyDeleteYou're welcome! I wouldn't do it either, if I couldn't keep it simple. It has to be something I can throw together without investing loads of time or money. We have enough stress in our lives without making meals a challenge, too.
